"Mouth Watering Enchiladas" is a diner's view of a platter of 3 enchiladas surrounded by beans and rice with various condiments in the background. The artist created a frame for the composition which he then interrupts with melted cheese, oozing from the hot encilladas, indeed a "Legendary Feast" Viramontes adds a blindstamp using a pre-Columbian head symbol to the left of the title.
This image by Xavier Viramontes was incluede in the portfolio The Legendary Feast by the Fort Mason Printmakers, under the direction of Eleanor Rappe. The Fort Mason Printmakers created several themed portfolios throughout the 1970s and '80s, a project that highlighted the diversity of the San Francisco teaching facilty and art press.
The Legendary Feast dealt with the theme of food and gathering, borrowing from history and myth to create a sense of celebration. The group of 23 artists' works is broken down into three sections, "Of Time", "Of Place", and "Of Table". "Mouth Watering Enchiladas" is from the second section.
